Simple Almond Cake (Print Version)

# Ingredients:

01 - 2 teaspoons of baking powder
02 - A quarter teaspoon of salt
03 - 2 cups of fine almond flour, no skins
04 - 1/4 cup raw almond slices, plus extras for the top

→ Wet Ingredients

05 - A half cup of pure maple syrup
06 - 3 eggs straight from the fridge
07 - 2 tablespoons of either avocado or olive oil
08 - 1/2 teaspoon vanilla extract
09 - 1 teaspoon of almond extract for flavor

→ For Finishing

10 - Sprinkle powdered sugar to decorate

# Instructions:

01 - Set your oven to 350°F first. Coat an 8-inch round or springform pan with a good layer of cooking spray so nothing sticks.
02 - Place almond slices evenly on a small oven tray. Toast for 4 to 5 minutes until lightly browned. They can burn quickly, so check often. Let them cool when done.
03 - Toss the almond flour, salt, and baking powder into a medium bowl. Stir until combined.
04 - In a large bowl, whisk the eggs, maple syrup, oil, vanilla, and almond extract until smooth and consistent.
05 - Slowly incorporate the dry mix into the wet bowl. Gently combine until the batter is smooth without any dry pockets.
06 - Pour the batter into the prepped pan. Scatter the toasted almonds over the top. Bake for 20-25 minutes, or until a toothpick inserted comes out clean and it's golden.
07 - After it cools in the pan, dust it with powdered sugar on top. Add more almonds if you love the crunch!
