Set your oven to 350°F first. Coat an 8-inch round or springform pan with a good layer of cooking spray so nothing sticks.

Place almond slices evenly on a small oven tray. Toast for 4 to 5 minutes until lightly browned. They can burn quickly, so check often. Let them cool when done.

Toss the almond flour, salt, and baking powder into a medium bowl. Stir until combined.

In a large bowl, whisk the eggs, maple syrup, oil, vanilla, and almond extract until smooth and consistent.

Slowly incorporate the dry mix into the wet bowl. Gently combine until the batter is smooth without any dry pockets.

Pour the batter into the prepped pan. Scatter the toasted almonds over the top. Bake for 20-25 minutes, or until a toothpick inserted comes out clean and it's golden.

After it cools in the pan, dust it with powdered sugar on top. Add more almonds if you love the crunch!
