Bowl Baked Oatmeal (Print Version)

# Ingredients:

01 - 1 and 1/2 cups (225g) fresh or frozen berries (no need to thaw).
02 - 3 cups (255g) whole rolled oats (not instant).
03 - 1/2 cup (120ml) pure maple syrup.
04 - 2 large eggs.
05 - 1/4 cup (60g) mashed banana or plain applesauce.
06 - 1 teaspoon vanilla extract.
07 - 1/4 teaspoon salt.
08 - 1 teaspoon cinnamon powder.
09 - 1/4 cup (56g) melted unsalted butter, let it cool a bit.
10 - 1 teaspoon baking powder.
11 - 1 and 3/4 cups (420ml) milk, can be dairy or plant-based.
12 - Optional: 1/2 cup chopped pecans or walnuts to sprinkle on top.

# Instructions:

01 - Warm the oven to 350°F (177°C) and position the rack near the bottom. Lightly coat an 11x7 inch or 9x9 inch baking dish with oil spray.
02 - Combine everything in a big bowl, giving it a thorough stir. Pour this mixture evenly into the greased pan.
03 - Mix in nuts or scatter them on top if you'd like.
04 - Pop the pan in the oven and bake for about 35 minutes. Check that the center is almost set if you prefer it soft. If firmer oatmeal suits you better, keep it in until the center is fully firm.
05 - Let it sit for a few minutes to cool down, about 5 is good. Feel free to add some yogurt on the side if you'd like.
06 - Keep any extra oatmeal in the fridge, covered up tight, and finish it within a week.
