British Bubble and Squeak (Print Version)

# Ingredients:

→ Base Ingredients

01 - 1/2 cup onion, diced finely
02 - 1 cup cooked vegetables you have left over (chop roughly; carrots, peas, cabbage, or Brussels sprouts work great)
03 - 2 cups mashed potatoes you didn’t finish

→ Fats & Seasonings

04 - Salt and a good amount of freshly ground pepper to suit your taste
05 - 2 tablespoons olive oil
06 - 2 tablespoons butter

# Instructions:

01 - Toss the mashed potatoes, diced onions, and leftover chopped veggies in a big bowl. Stir everything around until it's all evenly combined.
02 - In a large frying pan set over medium heat, melt the butter and olive oil together. Once the mixture is bubbling and hot, you're ready to go!
03 - Spread the potato blend into a single, flat layer in your pan. Leave it alone to cook for 10 to 15 minutes, long enough to form a crispy, golden layer on the bottom.
04 - Flip the mixture gently (don’t stress over it breaking!) and let it cook another 5 to 10 minutes until both sides are perfectly golden-brown and crunchy.
05 - Sprinkle on some salt and pepper until it tastes just right. Share while it’s still fresh and crispy!
