Texas Rolls Butter (Print Version)

# Ingredients:

01 - 7 cups all-purpose flour (add more, up to 8 cups, if needed)
02 - ½ cup warm water
03 - 1 teaspoon sugar (to get yeast working)
04 - 4 teaspoons dry active yeast
05 - 2 eggs
06 - ½ cup sugar
07 - 2 cups milk, heated, then cooled until warm
08 - 2 tablespoons butter, melted for brushing after baking
09 - 2 teaspoons salt
10 - 3 tablespoons unsalted butter, melted and cooled slightly

→ Cinnamon Honey Butter

11 - 1 teaspoon cinnamon
12 - ¼ cup honey
13 - ¼ cup powdered sugar
14 - ½ cup butter (1 stick), softened

# Instructions:

01 - In your mixing bowl, stir together 1 teaspoon sugar, warm water, and the yeast. Leave it alone for 10-15 minutes. The top should look foamy when it's ready.
02 - Take the foamy yeast mix and add in warm (not hot) milk, slightly melted butter, eggs, half a cup of sugar, and a couple teaspoons of salt. Beat these up gently with the dough hook for a minute.
03 - Pour in the flour bit by bit, starting with 2 or 3 cups, and mix in between. Once the dough begins to come away from the sides of your bowl and feels soft but not sticky, you've probably added enough. Keep mixing to make the dough smooth and stretchy.
04 - Grease a big bowl lightly, pop the dough in, and cover it up with a kitchen towel that's damp. It needs about an hour in a cozy spot to grow until it's about double the size.
05 - Push the dough down to get the air out, then put it on a floured counter. Divide it into two chunks, roll each one until it's half an inch thick, and cut into rectangles or squares to form 30-35 rolls. Spread them out on two pans that have been sprayed to prevent sticking.
06 - Let the rolls sit again, covered, for half an hour to grow. Get your oven hot (350°F or 175°C) while you wait.
07 - Bake them until they're golden on top, around 15 to 20 minutes. Brush the freshly baked rolls with melted butter right after taking them out.
08 - Mix together softened butter, honey, powdered sugar, and cinnamon in a bowl. Stir or whisk till it's smooth and creamy.
09 - Pair the warm rolls with a spread of cinnamon honey butter, and dig in!

01 - For the fluffiest rolls, start with milk that's been scalded and cooled to around 110°F.
02 - Depending on the weather or your kitchen’s humidity, you might need 6-8 cups of flour.
03 - This makes 30-35 rolls—good for holidays or big dinners with the family.
