Cheesy Broccoli Soup (Print Version)

# Ingredients:

01 - 4 tablespoons of butter.
02 - 1 medium onion, chopped.
03 - 1/2 teaspoon of salt.
04 - Ground black pepper, to taste.
05 - 3 cloves of garlic, minced.
06 - 1/4 cup of all-purpose flour.
07 - 2 cups of milk (regular or almond works).
08 - Broth made from vegetables, 2 cups.
09 - Broccoli florets, 3 cups.
10 - 1 large carrot, sliced thin.
11 - 1/2 teaspoon of Dijon mustard.
12 - 2 cups of cheddar cheese, shredded.
13 - Optional: crispy bread crumbs for serving.

# Instructions:

01 - In a big pot, melt the butter. Toss in the chopped onion, some salt, and pepper. Let it cook for about 5 minutes until it softens up.
02 - Throw in the garlic, cook for another minute. Sprinkle the flour on top, stir for 2 minutes till it gets a light golden color. Slowly pour in the milk while stirring constantly.
03 - Pour in the veggie broth along with the broccoli pieces, carrot, and mustard. Stir it all up and let it simmer gently for 15-20 minutes or until the broccoli is nice and tender.
04 - Add the shredded cheese a little at a time, stirring until it melts smoothly. Taste and adjust the salt if you think it needs more. If you're feeling fancy, sprinkle those bread crumbs on top.
