Cheesy Taco Rice (Print Version)

# Ingredients:

01 - 1 pound of lean ground beef
02 - 1 small onion, chopped up finely
03 - 1 cup of uncooked white rice (long grain)
04 - 2 garlic cloves, minced
05 - 1 cup of shredded cheese (cheddar)
06 - 3 tablespoons of taco seasoning—usually one packet
07 - 2 cups of chicken broth (low sodium)
08 - 8 oz of tomato sauce

09 - Fresh cilantro, chopped
10 - Crushed tortilla chips
11 - Sour cream
12 - Shredded lettuce
13 - Diced tomatoes
14 - Diced avocados
15 - Thinly sliced jalapeños

# Instructions:

01 - Heat a big skillet, crumble and cook the beef over medium heat until browned.
02 - Toss in the onion, cook until soft. Stir in garlic for a minute before draining grease. Cook until there’s no pink left in the beef.
03 - Sprinkle on the taco seasoning, mix it well into the meat.
04 - Add the rice, broth, and tomato sauce. Stir, let it bubble up, then cover. Simmer on low-medium for 20 minutes, giving it a stir once in a while.
05 - Mix in the shredded cheese till melted, then spoon it up with your fave toppings.

01 - Making your own taco seasoning works great and tastes fresh.
02 - You can swap in ground turkey if you’re looking for a lighter version.
03 - Store extras in a sealed container for up to 4 days in the fridge or freeze for 3 months.
04 - To warm it up, pop it in the oven at 375°F with a cover for 15 minutes.
