Set your oven to 375°F and line a tray with parchment paper.

Blend the cream cheese cubes with powdered sugar on medium speed for 1-2 minutes until smooth. Scrape the sides of the mixing bowl as needed. Chill this mixture in the fridge while prepping the dough.

In the same bowl, cream the butter, brown sugar, and white sugar for about 2 minutes until the texture is fluffy. Then mix in the egg, extra yolk, vanilla, salt, and baking soda until it all combines.

Turn your mixer to low and slowly add in the flour until just combined. Stir in chocolate chunks by hand until evenly spread.

Scoop about 2 tablespoons of the dough, flatten each piece, and add 2 teaspoons of chilled filling to the center. Wrap the dough around the filling, sealing it completely.

Place stuffed dough balls on the lined tray with 2 inches of space between each. Bake for 9 minutes until the edges are golden and tops look just set.

Allow cookies to sit on the tray for 2-3 minutes before transferring to a rack to cool fully.
