Chocolate Cookies Cheesecake (Print Version)

# Ingredients:

01 - 12 oz cream cheese, diced
02 - 3/4 cup powdered sugar

→ Dough Mix

03 - 1 cup softened butter
04 - 1 cup packed light brown sugar
05 - 1/4 cup white sugar
06 - 1 egg and 1 extra yolk
07 - 2 tsp vanilla extract
08 - 1 tsp baking soda
09 - 1 tsp coarse salt
10 - 2 1/2 cups plain flour
11 - 2 cups semi-sweet chocolate chunks

# Instructions:

01 - Set your oven to 375°F and line a tray with parchment paper.
02 - Blend the cream cheese cubes with powdered sugar on medium speed for 1-2 minutes until smooth. Scrape the sides of the mixing bowl as needed. Chill this mixture in the fridge while prepping the dough.
03 - In the same bowl, cream the butter, brown sugar, and white sugar for about 2 minutes until the texture is fluffy. Then mix in the egg, extra yolk, vanilla, salt, and baking soda until it all combines.
04 - Turn your mixer to low and slowly add in the flour until just combined. Stir in chocolate chunks by hand until evenly spread.
05 - Scoop about 2 tablespoons of the dough, flatten each piece, and add 2 teaspoons of chilled filling to the center. Wrap the dough around the filling, sealing it completely.
06 - Place stuffed dough balls on the lined tray with 2 inches of space between each. Bake for 9 minutes until the edges are golden and tops look just set.
07 - Allow cookies to sit on the tray for 2-3 minutes before transferring to a rack to cool fully.

01 - They're amazing warm right out of the oven or reheated for 10 seconds in a microwave!
02 - For best freshness, pop them in the fridge, though leaving them at room temperature overnight works too.
