Citrus Orange Loaf (Print Version)

# Ingredients:

→ Cake Batter

01 - 1/4 cup freshly squeezed orange juice
02 - 1 tablespoon fresh orange zest
03 - 3 large eggs
04 - 1/2 cup olive oil (or vegetable/canola oil)
05 - Powdered sugar for dusting
06 - 1 cup granulated sugar
07 - 1 teaspoon vanilla extract
08 - 1 cup plain full-fat Greek yogurt
09 - 2 teaspoons baking powder
10 - ½ teaspoon salt
11 - 1.5 cups all-purpose flour

# Instructions:

01 - Preheat your oven to 350°F. Coat your loaf pan (8.5 x 4.5 inch) evenly with some grease and flour so it doesn't stick.
02 - Grab a medium bowl and whisk together the flour, salt, and baking powder until they're evenly mixed.
03 - In a bigger bowl, stir your yogurt, sugar, vanilla, eggs, fresh orange zest, and juice until there are no lumps. Slowly drizzle in the olive oil while whisking it all together.
04 - Carefully blend the dry mix into the wet mix. Stir gently only until you no longer see dry bits—don’t go overboard.
05 - Pour the batter into the prepped loaf pan and bake for about 50 to 55 minutes. Keep an eye on it—the top should turn golden, and a toothpick stuck in the middle should come out clean.
06 - Let the loaf sit in the pan for 20 minutes so it firms up, then place it on a wire rack to cool completely. Sprinkle a bit of powdered sugar on top if you’d like.

# Notes:

01 - This sweet and citrusy cake combines fresh orange flavors with the creamy texture of yogurt and the healthy fats of olive oil, making it a lighter choice for dessert.
02 - Stick to using full-fat Greek yogurt—it helps keep the texture moist, while lower-fat options might make the cake turn out dry.
