Easy Cabbage Soup (Print Version)

01 - 1 small green cabbage, roughly 1 pound (9 cups chopped)
02 - 2 Yukon Gold potatoes, cut into cubes
03 - 2 carrots, cut into chunks
04 - 4 garlic cloves, finely shredded
05 - 1 medium yellow onion, finely chopped
06 - 2 tablespoons extra-virgin olive oil
07 - 1 celery rib, diced into small pieces

09 - 1 teaspoon dried thyme
10 - 2 tablespoons white wine vinegar
11 - ¾ teaspoon flaky sea salt
12 - Freshly cracked black pepper

14 - 2 (14.5-ounce) tins of fire-roasted diced tomatoes
15 - 1 (15.5-ounce) tin of white beans, rinsed and drained

# Instructions:

01 - Warm up the olive oil in a big pot set to medium heat. Toss in the onion, carrots, celery, salt, and a few twists of fresh pepper. Stir every now and then and let cook for around 8 minutes.
02 - Splash in the vinegar, give it a mix, and then add the tomatoes, broth, beans, garlic, potatoes, cabbage, and thyme. Put the lid on and allow it to simmer gently for 20 to 30 minutes until the potatoes and cabbage soften.
03 - Adjust the seasoning, sprinkle parsley on top, and enjoy it warm.
