Easy Lentil Soup (Print Version)

# Ingredients:

01 - 2 cups of green lentils, washed clean.
02 - 8 cups chicken or veggie stock.
03 - 2 big potatoes, cut into chunks and peeled.
04 - 2 carrots, chopped and peeled.
05 - 1 onion, diced small.
06 - 2 celery stalks, sliced thin.
07 - 4 garlic cloves, finely chopped.
08 - 2 big scoops of butter.

# Instructions:

01 - Add rinsed lentils and your broth. Sprinkle in salt and pepper, then let it bubble softly.
02 - Heat the butter in a large pot. Add in the potatoes, garlic, carrots, celery, and onion. Cook for about 5-6 minutes till everything softens up.
03 - Let it simmer for 45 minutes. Stir here and there. The vegetables will get soft as it cooks.
04 - Feel like a thicker soup? Mix two tablespoons of cornflour with water and stir it right in.

01 - Blend some of the soup to make it smoother and creamier.
02 - Got time? Soak lentils for 2 hours beforehand.
03 - Boost flavor with some bay leaves or thyme.
