Fresh Tomato Herb Toast (Print Version)

# Ingredients:

→ Base & Spread

01 - 1 lemon, zested and halved (use juice from one half)
02 - 2 garlic confit cloves, mashed into a smooth blend
03 - 1/2 cup top-quality mayo
04 - 4 thick-cut slices of hearty bread (1/2 to 3/4 inches)

→ Garnishes

05 - 3 medium (or 4-5 smaller) heirloom tomato slices
06 - 2 teaspoons toasted sesame seeds
07 - 1 pinch flaky sea salt like Maldon
08 - Aleppo pepper for heat
09 - Freshly cracked black pepper, for seasoning
10 - 2 tablespoons finely sliced fresh chives
11 - A drizzle of high-quality olive oil

# Instructions:

01 - Stir together the mashed garlic and mayo in a little bowl. Squeeze in juice from half a lemon. Add some kosher salt and ground black pepper till it tastes perfect for you.
02 - Spread the mayo blend generously over your toasted bread slices. Arrange tomato slices neatly on top, overlapping slightly for a nice look. Cut the tomatoes into halves if they're large.
03 - Sprinkle on some sesame seeds, a tiny bit of flaky sea salt, and freshly ground black pepper. Add a dash of Aleppo pepper if you'd like a kick. Grate a bit of lemon zest over the top, then finish things off with a drizzle of olive oil.
