Fresh Tomato Toast (Print Version)

# Ingredients:

→ Toast Base

01 - One thick slice of rustic gluten-free sourdough bread (Bread Srsly or AWG Bakery are great options)
02 - A fresh clove of garlic, peeled and with the tip trimmed off
03 - Avocado or olive oil for the toasting process

→ Toppings

04 - 2 ounces of dairy-free mozzarella (2 round slices, Violife Cashew Mozzarella is a great choice)
05 - A small handful of baby spinach (around ¼ cup)
06 - Two medium tomato slices, ideally from red Heirlooms
07 - Fresh basil leaves (use 1 sliced and 1 left whole for garnish)
08 - 1-2 teaspoons of balsamic glaze or reduced balsamic vinegar

→ Seasonings

09 - Kosher or sea salt, adjust to your preference
10 - Freshly cracked black pepper, use as much as you'd like
11 - A dash of red chili oil or a sprinkle of red pepper garlic flakes, as desired

# Instructions:

01 - Heat your skillet on low-medium, drizzle oil onto the bread, then toast both sides until they're beautifully golden.
02 - Grab your garlic clove and rub the trimmed end over the warm toast to add a fragrant hint of garlic.
03 - Spread the mozzarella slices across the toast so the coverage is even.
04 - Lay down a layer of baby spinach on top of the cheese.
05 - Place tomato slices over the spinach, sprinkle with salt, pepper, and chili oil or flakes. Add the sliced basil on top and finish with a whole basil leaf for garnish, then drizzle with balsamic glaze.
06 - Slice it in half and dig in while it’s still warm!
