Grab a food processor or blender and toss in all the marinade ingredients. Blend it all up until it’s smooth.

Sprinkle salt and pepper on both sides of the cod. Save a small bit of the marinade and pour the rest over the fish. Let it sit for half an hour to an hour.

Sizzle some olive oil in a big frying pan. Cook the cod for about 3 minutes on each side until it’s golden brown.

Use the leftover marinade as a drizzle and optionally top it with parsley before serving.
