Greek Chicken Meatballs (Print Version)

# Ingredients:

→ Meatball Mix

01 - 500g minced chicken, fresh
02 - 100g feta cheese, crumbled
03 - 1 large zucchini, grated recently for freshness
04 - Lemon zest and juice from 1 large lemon
05 - 1 egg, fresh
06 - 2 finely chopped garlic cloves
07 - 1/2 cup breadcrumbs (golden preferred)
08 - 1/2 teaspoon salt (sea salt works great)
09 - 20g mixture of fresh greens (parsley, mint, and dill), chopped
10 - Pinch of ground black pepper for a kick
11 - A little extra virgin olive oil for brushing

→ Big Couscous

12 - 1 cup of pearl couscous
13 - 1.5 cups drinking water
14 - Pinch of sea salt (adjust as preferred)
15 - 5g chopped dill leaves, fresh
16 - 1 teaspoon extra virgin olive oil

→ Crisp Cucumber Salad

17 - 1 cucumber, sliced into thin rounds
18 - 1 red onion, sliced finely
19 - Dash of salt and freshly crushed pepper

# Instructions:

01 - Use a big bowl to combine minced chicken, crumbled feta, zucchini, lemon zest and juice, egg, minced garlic, breadcrumbs, salt, chopped herbs, and a dash of black pepper. Blend everything gently to keep it light but still fully mixed.
02 - Form 12 golf ball-sized meatballs using your hands. Lightly brush or spritz the meatballs with extra virgin olive oil to help them brown beautifully.
03 - For air fryers, set to 205°C and cook near the top layer for 11 minutes till well caramelized. Baking lovers, preheat the oven to 220°C and bake on an upper rack for 12-15 minutes until cooked and golden.
04 - Cook couscous by toasting it in olive oil over high heat for a minute or two until lightly golden. Then, pour in the water with a little salt. Simmer until tender but slightly firm (10-12 mins). Drain extras, mix in dill and olive oil, season as you like, and brighten it up with a hit of lemon juice (around 20ml).
05 - Take sliced cucumbers and red onions, toss them lightly in a bowl with a pinch of salt, some pepper, and the rest of the lemon juice. This crunchy mixture balances the flavors perfectly.
06 - Spoon your tasty couscous onto each serving plate, top with a few of the juicy meatballs, and add the crisp cucumber mix on the side. Finish with a splash of olive oil and enjoy it warm while fresh!
