Hawaiian Chicken Dinner (Print Version)

# Ingredients:

→ Sauce

01 - 1 1/2 Tbsp rice vinegar
02 - 3 Tbsp thawed pineapple juice concentrate
03 - 2 tsp finely minced fresh ginger
04 - 2 1/2 Tbsp soy sauce
05 - 2 tsp garlic, minced (about 2 cloves)
06 - 3/4 tsp ground black pepper
07 - 1/3 cup ketchup
08 - 2 tsp worcestershire sauce
09 - 2 1/2 tsp cornstarch
10 - 2 Tbsp dark or light brown sugar, tightly packed

→ Chicken Mix

11 - 2 cups chunks of fresh pineapple
12 - 1 small red onion, cut into bite-sized pieces
13 - 2 Tbsp chopped fresh cilantro (optional)
14 - 1 medium green bell pepper, cut into 1-inch pieces
15 - 1 1/2 pounds boneless, skinless chicken breasts, cut into cubes (about 1 inch)
16 - 1 medium red bell pepper, chopped into squares

# Instructions:

01 - Set your oven to 350°F (175°C) to get it warmed up.
02 - Spray a large rimmed baking pan (18 x 13 inches) with non-stick spray so things don't stick.
03 - Grab a medium-sized bowl and whisk all the sauce ingredients—soy sauce, ketchup, pineapple juice concentrate, brown sugar, rice vinegar, cornstarch, worcestershire, garlic, ginger, and pepper—until smooth and well blend together.
04 - Take the chicken cubes, both colored peppers, and onion pieces, and spread them out on your baking sheet in a single layer.
05 - Pour that sauce you just mixed over the chicken and veggies, then toss it all together so everything gets a nice, even coating.
06 - Put the pan in the oven and let it bake for about 10 minutes.
07 - Take the pan out, give it a mix to make sure everything cooks evenly, then scatter the pineapple chunks all over the mixture.
08 - Put the pan back in the oven and cook it for 7-10 minutes more, until the chicken’s fully done and has an internal temperature of 165°F (74°C).
09 - Once done, pull the pan out of the oven, toss everything again to coat in that thickened sauce, sprinkle some cilantro on top (if using), and serve hot. It goes great over coconut rice!

# Notes:

01 - Make sure to use fresh pineapple since canned or frozen just won’t give the same results.
02 - Adding the pineapple midway stops it from getting too mushy or watery.
03 - Pair this dish with coconut rice for a filling meal.
04 - Cut all your chicken and veggies into roughly 1-inch pieces so they cook evenly.
