Set your oven to 350°F (175°C) to get it warmed up.

Spray a large rimmed baking pan (18 x 13 inches) with non-stick spray so things don't stick.

Grab a medium-sized bowl and whisk all the sauce ingredients—soy sauce, ketchup, pineapple juice concentrate, brown sugar, rice vinegar, cornstarch, worcestershire, garlic, ginger, and pepper—until smooth and well blend together.

Take the chicken cubes, both colored peppers, and onion pieces, and spread them out on your baking sheet in a single layer.

Pour that sauce you just mixed over the chicken and veggies, then toss it all together so everything gets a nice, even coating.

Put the pan in the oven and let it bake for about 10 minutes.

Take the pan out, give it a mix to make sure everything cooks evenly, then scatter the pineapple chunks all over the mixture.

Put the pan back in the oven and cook it for 7-10 minutes more, until the chicken’s fully done and has an internal temperature of 165°F (74°C).

Once done, pull the pan out of the oven, toss everything again to coat in that thickened sauce, sprinkle some cilantro on top (if using), and serve hot. It goes great over coconut rice!
