Carrot Ginger Boost Soup (Print Version)

# Ingredients:

01 - 1 garlic clove, finely chopped
02 - 1/4 teaspoon turmeric powder
03 - 1 tablespoon freshly squeezed orange juice
04 - 1 teaspoon grated fresh ginger
05 - 1 1/2 cups vegetable stock
06 - 1/4 teaspoon ground black pepper
07 - 1/4 teaspoon salt (adjust as needed)
08 - 2 1/2 cups diced carrots
09 - 1/2 cup diced white onion
10 - 1 tablespoon olive oil

# Instructions:

01 - Warm the olive oil in a medium pot over medium heat. Toss in the carrots and onion, stirring every now and then, until soft (about 8-10 minutes). Add the garlic at the end, then take off the heat.
02 - Combine the cooked carrots, ginger, turmeric, orange juice, veggie stock, salt, and pepper in a blender. Blend it until it’s smooth and velvety.
03 - Pour it hot into bowls, then top with a drizzle of olive oil and a sprinkle of fresh pepper before serving.
