Red Curry Noodle Dish (Print Version)

01 - 6 cups chicken broth, low in sodium
02 - 3 tablespoons curry paste (red)
03 - 1 tablespoon brown sugar
04 - 1 tablespoon grated ginger, fresh
05 - 3 cloves garlic, finely chopped
06 - 1 onion, chopped
07 - 1 red bell pepper, chopped
08 - 1 tablespoon fish sauce
09 - 13.5-ounce can coconut milk
10 - 4 ounces of rice noodles
11 - 1 tablespoon olive oil
12 - Kosher salt and black pepper, as needed
13 - 1 ½ pounds chicken breasts, no skin or bones, cut into small pieces

14 - Fresh basil, chopped (¼ cup)
15 - Cilantro leaves, freshly chopped (½ cup)
16 - 2 tablespoons lime juice, freshly squeezed
17 - 3 green onions, chopped thinly

# Instructions:

01 - In the same pot, toss in the garlic, onions, and bell pepper. Keep stirring until they're soft and smell amazing, which only takes a few minutes.
02 - Warm up the olive oil over medium heat in a big pot. Sprinkle some salt and pepper on the chicken chunks, then toss them in. Let them cook until golden for a couple of minutes, then set them aside.
03 - Stir in the red curry paste and ginger. Cook briefly—just enough for the spices to bloom, no more than a minute.
04 - Pour in the coconut milk and chicken broth. Scrape the bottom of the pot to mix in all the browned bits. They pack in deep flavor!
05 - Pop the chicken back into the pot. Let it reach a boil, then lower it to a simmer. Give it about 10 minutes to cook through, stirring every now and then.
06 - Toss the noodles in with a splash of fish sauce and a little brown sugar. Stir occasionally as it simmers until the noodles get soft, which takes roughly 5 minutes.
07 - Once off the heat, sprinkle in the green onions, cilantro, basil, and lime juice. Taste and adjust with more seasoning if needed.
08 - Scoop the soup into bowls while it's piping hot. Grab a spoon and dig in!
