Potatoes With Feta & Peppers (Print Version)

# Ingredients:

01 - 1 medium-sized red bell pepper, diced into chunks
02 - 1 kilogram of potatoes, peeled and chopped into small pieces
03 - 3 tablespoons of olive oil
04 - Juice from a quarter lemon
05 - 1 teaspoon of salt

→ Fresh Spice Mix

06 - 1 teaspoon of paprika
07 - 1 teaspoon of garlic powder
08 - 1 teaspoon of onion powder
09 - 1/2 teaspoon ground pepper
10 - 1 teaspoon dried oregano
11 - 1/4 teaspoon of cinnamon

→ Toppings

12 - 2 tablespoons of chopped fresh parsley
13 - A small handful of crumbled feta cheese (around 60 grams)
14 - Juice squeezed from another quarter lemon

# Instructions:

01 - Set your oven temperature to 200°C (400°F) and let it heat up.
02 - In a big mixing bowl, toss together the potato chunks and bell pepper cubes with 2 tablespoons of olive oil, a pinch of salt, and lemon juice from 1/4 lemon.
03 - Spread the remaining 1 tablespoon of olive oil over a large baking pan. Then, arrange your seasoned veggies on the tray in an even layer.
04 - Place the baking sheet on the middle rack of the oven and let the vegetables cook for about 25 minutes.
05 - Pull the tray out and scatter your homemade spice mix over the veggies. Stir everything up so the flavors coat each piece well.
06 - Slide the tray back into the oven for another 10 to 15 minutes. You want the potatoes to be crispy but soft inside.
07 - Squeeze over another splash of lemon, sprinkle with parsley, and crumble the feta cheese right on top before serving.
