Scallion Sesame Snacks (Print Version)

# Ingredients:

01 - 1/4 cup sesame seeds, toasted
02 - 1/2 teaspoon table salt
03 - 1/2 teaspoon dry yeast, active
04 - 1/8 teaspoon baking soda
05 - 1 1/3 cups plain flour

06 - 1 cup scallions, diced super fine

→ Wet Ingredients

07 - 2 tablespoons butter, melted
08 - 1/2 cup milk, not cold

# Instructions:

01 - Mix the flour, sesame seeds, salt, baking soda, and yeast together in a big bowl. Toss in the scallions and stir well. Pour in the melted butter and milk that’s at room temp. Stir until it pulls together, then knead it briefly until smooth. Set it aside to chill for 15 minutes.
02 - Turn on your oven to 375°F (190°C) so it heats up. Cut the dough into two halves and line your counter with a sheet of parchment paper. Coat your rolling pin lightly with oil so the dough doesn’t stick.
03 - Flatten one half of the dough on the parchment paper until it’s super thin—aim for about 2 millimeters (like a coin). Grab a small round cutter or even the rim of a glass to punch out little cracker shapes.
04 - Move your freshly cut crackers onto a baking tray. Take a fork and gently poke holes in them; this keeps them from puffing up while they cook.
05 - Pop the tray in the oven and cook for 12 to 15 minutes, or until they turn crispy and golden. Let them cool fully before packing them away or digging in.
