Creamy Tortellini Crockpot (Print Version)

# Ingredients:

→ Meat & Pasta

01 - Cheese tortellini, 3 cups (250g), either fresh or frozen
02 - Italian sausage, mild or spicy, ¾ pound (375g)

→ Vegetables

03 - 2 celery stalks, thinly sliced
04 - 3 minced garlic cloves
05 - 2 cups chopped kale or fresh spinach
06 - 2 large carrots, peeled and diced
07 - ½ onion, diced finely

→ Liquids & Seasonings

08 - ¼ cup Parmesan, finely grated
09 - Tomato paste, 2 tablespoons
10 - 1½ teaspoons Italian herbs
11 - 4 cups chicken broth, low sodium
12 - ¾ teaspoon salt
13 - 1 cup cream (use what you prefer)

# Instructions:

01 - Put sausage and onions in a big pan. Cook over medium-high until they turn brown. Drain the extra grease if you want.
02 - Throw in garlic, tomato paste, salt, and the Italian spices. Stir and let it cook for another two minutes.
03 - Move the meat mixture to a 4-6 quart slow cooker. Add the celery, broth, and chopped carrots.
04 - Close the lid and let it go for 5-6 hours on low or 2-3 hours on high. Keep going until the veggies feel soft.
05 - Toss in the spinach, Parmesan, cream, and tortellini. Let it cook for 10-15 more minutes until the tortellini feels just right.

# Notes:

01 - White beans or chicken can replace sausage
02 - Any kind of cream works fine
03 - Consider cooking other pasta types separately unless they're fresh
