Chorizo Sandwich (Print Version)

# Ingredients:

→ Dough

01 - Olive oil as needed
02 - ½ cup cornmeal
03 - 1 cup all-purpose flour
04 - 1 whole pizza dough split into four pieces

→ Choripan

05 - Sliced jalapeños (optional)
06 - Sliced tomatoes (optional)
07 - 9-10 slices of mozzarella cheese
08 - Mayonnaise if you like
09 - 3-4 chorizo links

→ Chimichurri

10 - Salt for flavor
11 - Olive oil to reach your preferred texture
12 - 1 tablespoon of red chili flakes
13 - 4-6 minced garlic cloves
14 - ¼ cup of red wine vinegar
15 - ¾ cup finely chopped parsley

# Instructions:

01 - Get your pizza oven warmed up to a temperature between 450 and 500°F.
02 - Grab a bowl and toss in the parsley, red wine vinegar, garlic, chili flakes, olive oil, and salt. Stir it all up and let it sit until needed.
03 - Pop a cast iron pan into the oven to warm up. Toss in the sausage and cook it for about 10-12 minutes until done. Take it out and set it aside.
04 - Cut your dough into four parts. Coat your workspace with flour and stretch each piece out to roughly 8 inches across.
05 - Brush the stretched dough with olive oil, then load up the tops with mozzarella.
06 - Fold each dough piece into a half-circle shape, coat it lightly with oil, and bake it in the pizza oven for 10 minutes. The dough should be cooked and the cheese gooey.
07 - Slice up the cooked sausages and stuff them into your warm pizza buns.
08 - Spread some chimichurri over each sandwich and garnish with jalapeños, tomatoes, and mayo if you’re into that. Dig in while it's hot!
