Get your pizza oven warmed up to a temperature between 450 and 500°F.

Grab a bowl and toss in the parsley, red wine vinegar, garlic, chili flakes, olive oil, and salt. Stir it all up and let it sit until needed.

Pop a cast iron pan into the oven to warm up. Toss in the sausage and cook it for about 10-12 minutes until done. Take it out and set it aside.

Cut your dough into four parts. Coat your workspace with flour and stretch each piece out to roughly 8 inches across.

Brush the stretched dough with olive oil, then load up the tops with mozzarella.

Fold each dough piece into a half-circle shape, coat it lightly with oil, and bake it in the pizza oven for 10 minutes. The dough should be cooked and the cheese gooey.

Slice up the cooked sausages and stuff them into your warm pizza buns.

Spread some chimichurri over each sandwich and garnish with jalapeños, tomatoes, and mayo if you’re into that. Dig in while it's hot!
