Crank your oven up to 425°F so it can heat while you’re getting everything ready.

In a large bowl, mix the potato halves with oil, salt, and just 1 tablespoon of harissa until it's all evenly mixed and the potatoes are coated.

Pour the seasoned potatoes onto a baking sheet and spread them out flat. Bake for 25-28 minutes, stirring them around in the middle. They're done once they're tender enough to pierce with a fork.

After removing them from the oven, mix the potatoes with the rest of the harissa paste. Sprinkle some parsley on top and squeeze on a little lemon for extra zest.
