Spicy Harissa Potatoes (Print Version)

# Ingredients:

01 - Fresh lemon juice, adjust based on your taste
02 - 2 tablespoons olive oil
03 - 2 tablespoons harissa paste
04 - 1.5 lbs baby potatoes, sliced into halves
05 - Chopped parsley for topping
06 - 1 teaspoon kosher salt

# Instructions:

01 - Crank your oven up to 425°F so it can heat while you’re getting everything ready.
02 - In a large bowl, mix the potato halves with oil, salt, and just 1 tablespoon of harissa until it's all evenly mixed and the potatoes are coated.
03 - Pour the seasoned potatoes onto a baking sheet and spread them out flat. Bake for 25-28 minutes, stirring them around in the middle. They're done once they're tender enough to pierce with a fork.
04 - After removing them from the oven, mix the potatoes with the rest of the harissa paste. Sprinkle some parsley on top and squeeze on a little lemon for extra zest.

# Notes:

01 - Harissa is a spicy sauce from North Africa, available in bigger grocery stores. Mina makes a chunkier version that comes in both mild and spicy.
02 - I went with the spicy option, which gave this dish medium heat. If you’re using a different brand, taste it first and adjust to your liking.
03 - These potatoes are great as a side dish and pair well with grilled veggies, meats, or fish.
