Spicy Sweet Crispy Wings (Print Version)

# Ingredients:

→ Sauce Ingredients

01 - ¼ cup of ketchup
02 - 1 tablespoon of molasses (unsulfured)
03 - 3 tablespoons of real maple syrup
04 - 2 teaspoons of chipotle chilies, minced, from a can of adobo chipotles
05 - ½ teaspoon mustard powder
06 - 2 teaspoons of cider vinegar
07 - 2 teaspoons of Worcestershire sauce
08 - ¼ teaspoon garlic powder
09 - ½ teaspoon onion powder

→ Dry Spice Mix

10 - 1 ½ teaspoons packed dark brown sugar
11 - ⅛ teaspoon kosher salt
12 - ½ teaspoon onion powder
13 - ½ teaspoon garlic powder
14 - ⅛ teaspoon freshly ground black pepper
15 - 1 teaspoon Hungarian sweet paprika
16 - ⅛ teaspoon chipotle chili powder

→ The Wings

17 - 2 teaspoons of olive oil
18 - 1 pound of chicken wings (about 10 mixed drumettes and flats)

# Instructions:

01 - Preheat your oven to 350°F once you've placed a roasting pan with a wire rack inside on the middle rack. Let everything heat together.
02 - Grab a small bowl and mix up all the dry ingredients for the spice rub. Set aside so it's ready for later.
03 - Use a paper towel to dry off the wings after rinsing them. Toss them into a medium-sized bowl, drizzle with the olive oil, and coat evenly. Sprinkle about a tablespoon (or more if you like) of the spice rub and toss again until well-coated. Let them sit for around 15 minutes so the flavors can hang out.
04 - Put the wings, skin side up, on the rack or pan. Bake them for 20 minutes, flip them over, and bake again for another 20 minutes.
05 - While the wings are cooking, whisk together all the sauce ingredients in a small saucepan. Bring it up to a boil over medium, then turn it down to low and let it simmer for 15 minutes so the flavors can come together. Put it off to the side when done.
06 - Flip the wings one last time and broil them for around 3 to 5 minutes, just until the edges get nice and browned (but not burnt). Toss them with a few spoonfuls of sauce so they're evenly coated.
07 - Leave the wings alone for a couple of minutes so they're not piping hot. Serve with the extra sauce in a dish for dipping.

# Notes:

01 - Swap in smoked paprika if you want a more smoky vibe.
02 - Keep leftovers in a sealed container in the fridge for up to 3-4 days.
