# Ingredients:

01 - 1/4 cup tangy Greek yogurt
02 - 1 fresh egg, whisked softly
03 - 4 tablespoons quality olive oil or swap with melted butter if that's your vibe

05 - 1 tablespoon of finely chopped scallions
06 - 1 tablespoon chopped dill, fresh is best!
07 - 1½ cups of baby spinach, chopped small

08 - 1 cup self-rising flour
09 - 1/3 cup mozzarella, shredded fresh
10 - 4 ounces crumbly feta cheese

# Instructions:

01 - Preheat the oven to a warm 350°F. Put parchment paper on your baking sheet so nothing gets stuck.
02 - Grab a big bowl and stir together the beaten egg, olive oil, and creamy yogurt. Mix until smooth and silky.
03 - Add in the chopped spinach, scallions, dill, crumbled feta, mozzarella, salt, and pepper. Stir until everything blends nicely.
04 - Sift the flour right into the mixture. Stir it all up! If it feels too dry, don’t worry—keep mixing until it forms a dough. Use your hands if the spoon isn’t cutting it.
05 - Make small dough balls, flatten them gently, and pop them into the oven. Bake for 17-20 minutes until they’ve got that golden glow.

# Notes:

01 - No self-rising flour? Mix 1 cup all-purpose flour with 1 teaspoon baking powder, 1/4 teaspoon baking soda, and 1/2 teaspoon salt to make your own.
