Warm some oil or spray in a non-stick pan over medium heat. Pour in the egg whites, sprinkle on the salt and pepper, and flip carefully until both sides are cooked. Take them out of the pan and set aside.

Toss spinach into the same skillet, pop on a lid, and let it steam for a minute or two until it softens.

Spread your tortilla on a flat surface, then stack the egg whites in the middle. Add the steamed spinach on top, sprinkle the feta, and finish with the chopped sun-dried tomatoes. Tuck in the edges and roll it up tightly.

Put the wrap back into the pan and heat all sides until browned, or tuck it in a panini press to crisp it and warm it through.
