Soft Strawberry Lemon Bars (Print Version)

# Ingredients:

01 - 2 1/4 cups plain flour
02 - 3/4 cup granulated sugar
03 - 1 cup chilled butter softened
04 - 1 egg, large
05 - 1/4 cup lemon juice, freshly squeezed
06 - 1/2 teaspoon salt
07 - 1/2 teaspoon baking powder
08 - 1 cup diced fresh strawberries

09 - 1 cup sifted powdered sugar
10 - 1 tablespoon puree from fresh strawberries (about 2 large berries)
11 - 1 tablespoon or so of lemon juice (adjust for thickness)

# Instructions:

01 - Set your oven to 350°F. Grab a parchment-lined 9-inch square pan, leaving some edges hanging out for easy removal later.
02 - Cream butter with sugar until it's light and creamy. Toss in the egg, blending until smooth. Add lemon juice—don't worry if it looks a little off.
03 - Stir flour, salt, and baking powder together. Slowly stir into the wet mixture until just mixed. Gently fold in strawberry chunks.
04 - Even out the thick mixture in your prepared pan (a spatula helps). Pop it into the oven for about 30-35 minutes. It’s ready when it's golden at the edges and set in the center.
05 - Blend fresh strawberries and strain the juice for 1 tablespoon of puree. Stir it into the powdered sugar with lemon juice until spreadable. Pour over cooled blondies and let it set before slicing.
