Set a big nonstick skillet over medium-low warmth. Spray it lightly with your cooking spray.

Whisk the eggs together, seasoning with a bit of salt and black pepper. Pour them evenly across the pan. Dip one slice of the bread into the eggs, flip it to coat, then do the same with the second slice.

Once the eggs look mostly cooked (about a minute), carefully flip everything, including the bread, using a spatula.

Take one piece of bread and lay cheese or other add-ins on top. Tuck any extra bits of egg onto the bread while you're at it.

Layer the plain bread on top of the loaded one. Tilt it to get your flip just right. Leave it on the heat until both sides are golden, and the cheese is gooey and melted.
