Cottage Cheese Chicken Blend (Print Version)

# Ingredients:

→ Protein & Dairy

01 - 1 cup cottage cheese
02 - 1.25 lb cooked chicken breast, chopped or pulled into strips

→ Fresh Produce

03 - 1 rib of celery, diced small
04 - 3 tablespoons of scallions, chopped fine
05 - 2 tablespoons of freshly chopped dill

→ Dressing & Seasonings

06 - 1 tablespoon Dijon mustard
07 - 1/2 teaspoon of garlic powder
08 - A pinch or two of salt, plus extra if needed
09 - A quarter teaspoon of black pepper, or more if you’d like
10 - 2 tablespoons lemon juice
11 - Half a teaspoon of maple syrup

# Instructions:

01 - Use a blender or a stick blender to make your cottage cheese smooth and velvety. Tip: If you have one, the stick blender works great straight in the container! Or don’t blend at all if you’re into the little cheese curds.
02 - Get a medium-sized bowl and stir together the smooth cottage cheese, chopped dill, diced celery, scallions, dijon mustard, a touch of maple syrup, fresh lemon juice, and all your spices. Mix until it’s all combined.
03 - Toss the chicken into the bowl with the dressing. Stir everything until it’s coated well. Take a little taste test and tweak the salt or pepper if needed.

01 - Leftover blended cottage cheese works great for making ranch dressing
02 - Makes 5-6 bowls worth of chicken mix
