Peanut Butter Snacks (Print Version)

# Ingredients:

→ Yogurt Filling

01 - 1 Tablespoon peanut butter
02 - ¼ cup powdered peanut butter (brands like PB2, PB Fit, or Clean Simple Eats work great)
03 - ½ tablespoon maple syrup
04 - ½ cup Greek yogurt (use whole milk for the best texture)

→ Chocolate Coating

05 - Flaky sea salt for sprinkling (optional)
06 - 1 teaspoon coconut oil
07 - ½ cup dark chocolate chips (Lily's stevia-sweetened chips are ideal)

# Instructions:

01 - Take a medium-sized bowl and stir together the Greek yogurt, powdered peanut butter, regular peanut butter, and maple syrup. Mix until the mixture feels smooth and everything blends nicely.
02 - Grab a baking sheet or small plate and line it with parchment. Use a tablespoon or cookie scoop to portion out the yogurt mixture, making roughly six similar mounds. You can smooth them out into rounds if you'd like.
03 - Pop the tray of yogurt mounds into the freezer for around 10 to 20 minutes. Make sure they're hardened enough to handle for the next step.
04 - While the yogurt bites chill, toss the chocolate chips and coconut oil into a microwave-safe bowl. Zap it for 30 seconds at a time, giving it a stir between bursts, until the chocolate is completely melted and silky.
05 - Pull the bites out of the freezer and, one by one, dunk them into the melted chocolate. Use a fork to make sure they’re fully covered, letting the extra chocolate drip off before placing them back on the parchment.
06 - Before the chocolate hardens, sprinkle a bit of flaky sea salt on top of each coated bite if you like. It gives a killer sweet and salty flavor!
07 - Move the chocolate-dipped bites to the fridge and let the chocolate harden completely. This usually takes about 5 to 10 minutes. Once set, store them in an airtight container in the fridge and enjoy for up to 3 or 4 days.
