Cucumber Pepper Salad (Print Version)

# Ingredients:

→ Crunchy Veggies

01 - 10 mini sweet peppers, cut into thin rings
02 - 4 small cucumbers, sliced into thin rounds

→ Flavor Boosters

03 - 1 teaspoon chili crisp, spice it up or tone it down as you like
04 - ½ Tablespoon Everything Bagel seasoning for extra crunch

→ Ginger-Sesame Dressing

05 - ¼ cup top-quality extra virgin olive oil
06 - ¼ cup plain rice vinegar (unseasoned)
07 - 1 ½ Tablespoons soy sauce or tamari
08 - 1 ½ Tablespoons maple syrup for a hint of sweetness
09 - 2 teaspoons nutty sesame oil
10 - 1 large garlic clove
11 - 1-inch piece of fresh ginger
12 - A small pinch of ground black pepper

# Instructions:

01 - Put all the dressing ingredients into a blender, and blend until it turns smooth and creamy. Set it to the side while you chop up the veggies.
02 - In a big bowl, toss together the sliced bell peppers and cucumbers. Drizzle roughly ¼ cup of the creamy dressing over the top. Sprinkle in the chili crisp and Everything Bagel seasoning. Stir it all up until it’s evenly coated. Taste and tweak the seasoning how you like it!
