Garlic-Parmesan Cabbage Bake (Print Version)

# Ingredients:

01 - Half of a big head of either red or green cabbage.
02 - 6 tbsp Parmesan cheese (grated), plus extra to sprinkle on top.
03 - 4 garlic cloves, either finely chopped or grated.
04 - 3 tbsp olive oil, extra virgin.
05 - 3 tbsp rice vinegar.
06 - 1 tbsp low-sodium soy sauce.
07 - 1/2 tsp table salt.
08 - 1/4 tsp crushed chili flakes (optional).

# Instructions:

01 - Set your oven to 425°F. Slice the cabbage into 8 pieces (roughly 1-inch thick), keeping the core attached.
02 - In a small bowl, stir together the Parmesan, garlic, olive oil, vinegar, soy sauce, and salt.
03 - Place the cabbage slices with the cut side facing down on a big baking sheet. Coat the wedges all over with the Parmesan-garlic mix.
04 - Cook for around 20 minutes until the edges turn golden. Flip the slices and roast for another 10 minutes until soft and golden all over.
05 - Top with more Parmesan and crushed chili flakes, if you'd like.

# Notes:

01 - It's great alongside grilled meat or can easily work as a vegetarian main course.
02 - To add a crunch, throw some toasted breadcrumbs over it before serving.
