Set your oven to 425°F. Slice the cabbage into 8 pieces (roughly 1-inch thick), keeping the core attached.

In a small bowl, stir together the Parmesan, garlic, olive oil, vinegar, soy sauce, and salt.

Place the cabbage slices with the cut side facing down on a big baking sheet. Coat the wedges all over with the Parmesan-garlic mix.

Cook for around 20 minutes until the edges turn golden. Flip the slices and roast for another 10 minutes until soft and golden all over.

Top with more Parmesan and crushed chili flakes, if you'd like.
