Greek Chicken Bowls (Print Version)

# Ingredients:

→ Chicken Marinade

01 - 1/4 cup low-fat or full-fat plain Greek yogurt
02 - 2 tablespoons lemon juice, freshly squeezed
03 - 2 garlic cloves, finely grated
04 - 2 tablespoons parsley, chopped flat-leaf
05 - 1 tablespoon of olive oil
06 - 1 1/2 teaspoons oregano, dried
07 - 1/2 teaspoon of ground coriander
08 - 1/2 teaspoon smoked paprika
09 - 1/2 teaspoon ground cumin
10 - A pinch of salt and black pepper, freshly cracked, to suit your taste
11 - 1 1/4 pounds boneless, skinless chicken breast, diced into small pieces

→ Tzatziki Sauce

12 - 1 cup cucumber, shredded or finely diced
13 - 1 1/2 cups plain Greek yogurt (choose low-fat or full-fat)
14 - 2 tablespoons lemon juice, fresh
15 - 1 tablespoon dill, freshly chopped
16 - 1/2 teaspoon garlic, finely grated
17 - Salt and black pepper, season as you like

→ Bowl Assembly

18 - 1/4 cup red onion, diced small
19 - 1/2 cup feta cheese, crumbled
20 - 1/3 cup kalamata olives
21 - 2 cups brown rice, cooked
22 - 1 cup chopped cucumber
23 - 1 cup cherry tomatoes, sliced into quarters

# Instructions:

01 - Whisk all the marinade ingredients in a mixing bowl until they're combined. Toss in the chicken pieces and let them soak up the flavors for about 30 minutes.
02 - As the chicken is marinating, mix together the tzatziki ingredients in a bowl. Taste it and tweak the seasoning, then pop it in the fridge until serving time.
03 - Coat the base of a big skillet with olive oil and warm it on medium-high heat. Lay the chicken pieces down in one layer and cook for around 3-4 minutes to get them golden. Flip them to the other side and cook for another 4-5 minutes until done.
04 - Scoop some rice into a bowl and layer it with the cooked chicken, cucumbers, red onion, tomatoes, olives, feta, and a good-sized dollop of tzatziki sauce on top.
