Hot Honey Feta Chicken (Print Version)

# Ingredients:

β†’ Sweet-and-Spicy Honey Glaze

01 - 1 1/2 tsp hot sauce (try Cholula or Frank's)
02 - 1/3 cup honey
03 - 3/4 tsp red pepper flakes

β†’ Chicken and Seasoning Crust

04 - 1/4 cup plain flour
05 - 1 tsp garlic powder
06 - 1/2 tsp oregano (dry)
07 - A pair of large chicken breasts (around 9 oz each), halved horizontally
08 - 2 tsp smoked paprika
09 - 1 tsp table salt
10 - 1/2 tsp onion powder
11 - 1 cup panko crumbs
12 - A sprinkle of black pepper (about 1/2 tsp)
13 - A pinch of cayenne (1/4 tsp)
14 - 2 beaten eggs

β†’ Cooking and Final Touches

15 - Half a cup plus 2-3 tablespoons of vegetable oil for frying (roughly 6-8 tbsp)
16 - 7 oz feta, crumbled

# Instructions:

01 - Mix together honey, hot sauce, and chili flakes in a bowl. Warm it up in the microwave for about 20 seconds, stir well, and let it cool a bit. Add more chili flakes or hot sauce if you want extra heat.
02 - Carefully cut the chicken breasts in half horizontally so you get four thinner pieces. Combine the spices in a small bowl: garlic powder, onion powder, paprika, cayenne, black pepper, oregano, and salt.
03 - Set up three dishes for breading. In one, mix flour with half of your spice blend. In another, add your whisked eggs. Toss the remaining spice mix with the panko in the third dish. Coat each chicken slice in this order: flour first, then egg, and finally panko.
04 - Pour enough oil into a big frying pan to fully cover the base and warm it up over medium-high heat. Check that it’s hot by dropping in a breadcrumb (should sizzle!). Cook each chicken piece for 3-4 minutes on each side until golden and crispy. Add more oil if frying in batches.
05 - Sprinkle each piece of fried chicken with a generous amount of feta crumbles. Put them under the broiler to let the cheese brown just a little but leave it creamy underneath.
06 - Finish each chicken piece with a drizzle of the spiced honey glaze and serve while warm. Keep leftover honey in the fridge.

02 - Use any favorite hot sauce; Cholula and Frank's are just suggestions!
03 - Pairs nicely with roasted potatoes and a simple arugula salad.
