Using a vegetable peeler or mandoline, turn the cucumbers into thin slices. Add the slices to a large jug.

Toss the mint into the jug and lightly mash it up with the cucumber slices.

Juice 1 and a half lemons (or limes) into the jug, keeping the other half aside for decoration.

Pour in the sparkling water and give everything a good stir.

Pour over ice and top it off with lemon or lime slices and some mint sprigs if you’d like.
