Cool down with this Cucumber-Mint Spritzer, a breezy drink that's perfect when it's scorching outside. Fresh cucumber mixed with mint and a touch of lemon makes for a super hydrating and tasty cooler that'll quench your thirst instantly.

What You'll Need

  • Mini Cucumbers: 3 small ones, cut into skinny strips or circles to form your refreshing base.
  • Fresh Mint Leaves: 6 leaves, and save a few extra stems for topping, they'll add that garden-fresh kick.
  • Lemons or Limes: 2, for that zingy taste. Squeeze 1 1/2 into the mix, and keep the rest for making it look fancy.
  • Lemon Seltzer Water: 1 liter, gives your drink those fun bubbles and extra zing.
  • Ice Cubes: Toss in as many as you want, they'll keep everything nice and cold.

Making Your Spritzer

Step 1:
Grab your mandoline or veggie peeler and slice those mini cucumbers into thin strips or circles. Toss them into a pitcher.
Step 2:
Toss in your mint leaves and lightly crush them together with the cucumbers to let all those good flavors out.
Step 3:
Take 1 1/2 of your lemons (or limes) and squeeze all the juice into your pitcher. Save that other half for making things pretty later.
Step 4:
Now add your bubbly lemon seltzer water and give everything a good mix to blend all those tasty flavors.
Step 5:
Pour your drink over some ice in tall glasses. If you're feeling fancy, pop in some mint sprigs and lemon (or lime) slices on top.

Enjoy It Right

  • Always pour this Cucumber-Mint Spritzer over plenty of ice for the most refreshing sip possible.
  • Top each glass with a little mint sprig and lemon or lime slice to make it look pretty and add an extra flavor kick.
  • It's tastiest when you drink it right away, but you can keep any extras in the fridge for up to 2 days. Just give it a stir before pouring again.

Quick Pointers

  • Want it extra minty? Just crush in a couple more mint leaves when you're mixing with the cucumbers.
  • If you like things on the sweeter side, stir in a teaspoon of agave or honey before adding the bubbly water.

Expert Advice
