Set your oven to 425°F (220°C). Stick a baking sheet inside while it preheats. This hot sheet trick helps make your fries super crispy!

Chop your sweet potatoes into fry-sized sticks, about ¼-inch thick. You don’t have to peel them unless you prefer.

Place the sliced potatoes into a bowl of cold water for 30 minutes. This pulls out some starch, helping them crisp up later.

Drain the fries well and then pat them completely dry using paper towels. Toss them with olive oil, garlic powder, paprika, salt, and pepper in a bowl. If you’re using cornstarch, sprinkle that in at this stage and mix it all together.

Carefully grab the hot baking sheet, then arrange your fries on it in one even layer. Don’t crowd the pan! Bake for 25–30 minutes, flipping halfway through, until crispy and golden.

Once they’re cooked to a crisp, pull them out of the oven and let them cool for a few minutes before digging in.
