BLT Pasta Dish (Print Version)

# Ingredients:

→ Salad Fixings

01 - 1/4 red onion
02 - 1 pint grape tomatoes
03 - 12 oz. of bowtie-shaped noodles
04 - 2 cups packed leafy green spinach
05 - 8 oz. crispy bacon

→ Sauce

06 - 1/4 tsp black pepper, freshly cracked
07 - 3/4 cup mayo
08 - 2 Tbsp fresh lemon juice
09 - 1/4 cup creamy ranch dressing
10 - 1/2 tsp plain salt

# Instructions:

01 - Set a skillet over medium heat and cook the bacon till it's golden and crunchy. Move it to a plate with paper towels to soak up grease. Once cool, crumble or chop it into smaller chunks.
02 - As the bacon gets crispy, toss the mayo, ranch, lemon juice, salt, and pepper into a mixing bowl. Stir 'em up till smooth and set aside for later.
03 - Heat up a big pot of salty water until bubbling. Add your bowtie pasta and cook until soft, about 7 minutes. Drain in a colander, rinse lightly with cold water to stop cooking, and let it sit until dry.
04 - While waiting on pasta to cool, halve your grape tomatoes, dice the onion finely, and give the spinach a rough chop.
05 - Once your pasta's cool and dry, toss it into a big bowl. Throw in the spinach, onion, tomatoes, and your dressing. Stir everything so it's evenly mixed and every bite is full of flavor. Let it rest for 10-15 minutes to blend flavors, stir again, and serve.

# Notes:

01 - Great for summer BBQs, family get-togethers, or outdoor snacks.
02 - Store in the fridge for a day or two. Add fresh spinach at the last minute if prepping ahead to keep it crisp.
03 - Want a less rich bite? Swap part of the mayo for Greek yogurt.
04 - Makes about 8 cups, which is good for 8 servings of 1 cup each.
