Set a skillet over medium heat and cook the bacon till it's golden and crunchy. Move it to a plate with paper towels to soak up grease. Once cool, crumble or chop it into smaller chunks.
02 -
As the bacon gets crispy, toss the mayo, ranch, lemon juice, salt, and pepper into a mixing bowl. Stir 'em up till smooth and set aside for later.
03 -
Heat up a big pot of salty water until bubbling. Add your bowtie pasta and cook until soft, about 7 minutes. Drain in a colander, rinse lightly with cold water to stop cooking, and let it sit until dry.
04 -
While waiting on pasta to cool, halve your grape tomatoes, dice the onion finely, and give the spinach a rough chop.
05 -
Once your pasta's cool and dry, toss it into a big bowl. Throw in the spinach, onion, tomatoes, and your dressing. Stir everything so it's evenly mixed and every bite is full of flavor. Let it rest for 10-15 minutes to blend flavors, stir again, and serve.
